Another great FYI put together by my mother.
MEAT SAUCE BASE
1 lb. lean Ground Meat (beef and/or turkey)
1 Can of Hunts Spaghetti Sauce or whatever is available
Diced onions and/or garlic to taste
Brown meat with onions. Drain any fat. Add spaghetti sauce. Simmer. You can place in freezer and have on hand for quick meals. To make any of the following 18 meals; thaw, warm the meat sauce base and for … add:
1. Chili: 1 can kidney or any beans; chili powder to taste. Simmer. Cheese and/or diced onions and/or diced peppers on top. Serve with rice
2. Spaghetti: 1 jar additional spaghetti sauce. Simmer; pour over pasta
3. Sloppy Joes: 1 - 2 T. Worcestershire sauce. Simmer. Ladle over buns
4. Chuck Wagon Mac: Prepare box of macaroni & cheese plus 1 drained can of corn.
5. Pizza Casserole: spread meat sauce on bottom of greased baking dish, roll 1 can refrigerated pizza crust dough over sauce to cover. Sprinkle mozzarella cheese over dough. Lightly mist with oil. Arrange any topping like mushrooms or peppers and onions. Bake 400* about 18 minutes.
6. Spanish Rice: 1 each of sliced pepper and onions, cooked. Chili powder to taste. Mix with cooked rice. Simmer
7. Little Pizzas: spoon on toasted English Muffin half. Top with cheese. Sprinkle with favorite spices. Bake at 350* for 10 minutes
8. Lasagna: Alternate layers of meat sauce, cooked lasagna noodles, ricotta cheese and mozzarella cheese. Bake 350* 30 minutes
9. Black Beans & Rice: 1 can flavored black beans. Simmer. Serve over rice.
10. Burritos: 1 can chopped green chilies, grated cheddar cheese. Spoon meat base with chilies and cheese into middle of tortilla. Fold ends, roll into oblong roll. Wrap each in foil. Bake 350* for 20 minutes
11. Soup: 2 quarts prepared soup: either a soup mix or your own broth. Add any leftovers, any vegetables, beans, rice or pasta. Can add beef bouillon cubes for added beef flavor.
12. 3 - Cheese Casserole: any 3 cheeses on sale or 1 c. sour cheese, 3 oz. ricotta or cottage cheese, ½ c. grated cheddar cheese. Lightly mix with 1 lb. of cooked pasta or egg noodles. Cover and bake 350* for 30 minutes. Favorite "pot luck" casserole.
13. Italian Beef & Cheese Roll: 1 egg, 1-3/4 c Italian style bread crumbs, 1/2 c finely chopped onion, 2 cups (8 oz) shredded cheese & pizza spices. Mix well and shape into a flat rectangle about 10"x12" on a piece of wax paper. Sprinkle cheese evenly over meat mixture. Start with shortest end, roll up meat (jelly roll fashion), press ends of roll to seal. Bake in shallow pan, 1 hour at 350 degrees.
14. Greek Moussaka Style: add 1/2 cup of bread crumbs, 3 chopped onions, ½ t. cinnamon, ½ t cloves, 1/8 t. allspice, 2 bay leaves, 1 small can tomato paste to meat sauce. Simmer on low until all the liquid has been absorbed (about 20 minutes or so). When dry, remove bay leaves. Meanwhile, oil and brown 3 lbs. of sliced potatoes, zucchini, or eggplant (if using eggplant: first peel, salt, sit for 30 mins, rinse, drain ), set eggplant aside. Oil pan, sprinkle ½ cup bread crumbs over bottom, layer eggplant slices, then meat sauce, with eggplant slices on top; pour faux bechamel sauce (mix cheddar cheese soup with a pinch of cayenne pepper and ½ t. nutmeg) over top and bake 350* for 30 minutes, then sprinkle ½ to 1 cup parmesan cheese over top, bake 15 minutes more or until golden brown. This is a "dry" dish & is served warm, not hot.
15. Mexican Lasagna: 1 package of taco seasoning, 1(12oz.) can of refried beans. Stir and warm 5 minutes. In a baking dish, layer flour tortillas on bottom, then meat sauce, then sprinkle cheddar cheese. Repeat the 3 layers 2 or 3 more times. Bake @ 350* for 30 minutes.
16. Southwestern: small can each whole kernel corn, black beans, and chilies. Mix together, simmer and pour into baking dish. Make corn muffin mix ("Jiffy" is easy) with ¼ cup of cheddar cheese; then spread over meat sauce. Bake 400* about 15 or so minutes.
17. Middle East Dish: 1 t. allspice, 1 t. cinnamon to meat base. Alternate layers of sliced potatoes, onions and peppers with meat base. Bake 350* for 25 minutes 18. Taters n’ Cabbage: layer sliced potatoes on bottom of greased baking dish, next layer meat sauce, then a layer of chopped raw cabbage. Repeat layers. Cover. Bake 350* 25 minutes
