More FYI tips from my mother. We had them on Sept 23rd '09 and man, they were delicious! Only 300 calories each and you can freeze them for further use.

Easy Mini Meatloaves

Heat oven to 375°F. 

Mix together until well blended.



1 lb. extra-lean ground beef

1 pkg. (6 oz.) Stove Top or similar Stuffing Mix

1 cup water

plus one of the following seasonings:



1 tsp Italian seasoning or 2 tsp Chili powder or 1 tsp dried Oregano or 1 tsp Garlic powder

or 1 tsp onion powder     (1 tsp A-1 Streak Sauce or Worstershire sauce is optional)



Press into 12 muffin cups sprayed with cooking spray

Make indentation in center of each with back of spoon



Fill evenly with 3/4 cup of one of the following:

Spaghetti Sauce or  Chunky Salsa or chopped roasted Red Peppers or  Barbecue Sauce



Bake 30 min. or until meatloaves are done (160°F).



Top with 1/2  to 3/4 cup of following cheese:

Shredded Mozzarella Cheese or  Mexican Style Finely Shredded Four Cheese or Crumbled Feta Cheese or  Shredded Cheddar Cheese



Bake 5 min. or until cheese is melted

Let stand 10 min.



To Make Ahead:

Bake meatloaves as directed. Remove from muffin cups; cool completely. Place in single layer on baking sheet; freeze 1 hour. Transfer to airtight container. Store in freezer up to 1 month. Thaw in refrigerator, then reheat in 375°F-oven 20 min. or until heated through.



Serves 12  Each is 300 calories or under - 22g  protein - 9 g fat - 32g or under carbs - sugar 5g except barbecue sauce is 12g
