Meatloaf Mania

Dear Readers: My mother, the original Heloise (1919-1977), started this column in 1959. Recently, while cleaning out some files, I came across something she had written in her book "Hints for Working Women" (1970). She had a lot of say about MEATLOAF -- who knew? Here's the short version:

"Dear Readers: When all else fails (including your brain and budget!) and the prices of other meats are the cost of gold inlays ... remember hamburger, and let's make a meatloaf.

"Speaking as a working woman, let me say that one should never make one loaf at a time. Always make at least two. You can freeze one of them uncooked, cooked completely, or partially cook it and then freeze. I like the last way best because on our 'tired days' it takes less time to cook if we are in a hurry. And just who isn't nowadays?

"Meatloaf is great when served hot the first night with baked potatoes (and always throw in a few extras because they can be pan-fried or used for making potato salad the next day). As long as that oven is going, utilize that heat at the same time. Saves more money.

"The next night you can slice your loaf in thick pieces and broil under your broiler. Delicious when spread with oleo (oleo margarine, meaning margarine -- Heloise 2007), barbecue sauce or chili sauce. And what a change it makes for your taste buds, as it disguises the hamburger in a big way.

"It can always be pan-fried quickly for either open- or closed-faced sandwiches; diced and when slightly browned, scrambled with eggs for a quick hot meal." -- Heloise, the mother

MEATLOAF ADDITIONS

Speaking of meatloaf, here are some fillers to add to help it stretch and give it a special flavor. Give one or more a try:

crushed cornflake cereal

oatmeal

grated carrots

dried bread cubes

potato chips

TASTY TIDBITS

Let's test your ground-beef (hamburger) knowledge. In 1888, an English doctor prescribed three hamburger meals a day as a cure for various ailments. His name is remembered today as the name of a seasoned ground-beef patty served with a gravy. What's the doctor's name? Salisbury!

BANANA

Dear Heloise: I am the only banana eater in my house. I hate to waste food, but I like only half a banana on my cereal in the morning. I found that if I cut the banana in two and sprayed the saved cut end with olive-oil spray, the banana half would not discolor or get mushy for 24 hours. -- Mary Lou Heelan, Ogallala, Neb.
